Bhook On a Budget: Veggie Sandwich A La Subway
So you want Subway, but don’t wanna spend money, or spend ages recreating one? Or perhaps you’re vegetarian, in which case this humble vegetable sandwich is the perfect mealtime option. It’s super fresh, light and refreshing, and not to mention hearty: with all that fiber, your digestive system is going to be thanking you.



Ingredients:

  • 2 slices bread

  • Lettuce

  • Cucumber

  • Onion

  • Tomatoes

  • Mayonnaise

  • Chili garlic sauce

  • Barbecue Sauce

  • Honey Mustard




This is one of the easiest sandwiches ever. Basically, toast your slices of bread, and then add mayonnaise to both slices. Then, you’re going to slice up ANY vegetable you have/want to include in this. We’ve mentioned a list of Great To Have vegetables, but honestly, anything you want can be added. The sky is the limit. Think olives, sundried tomatoes, bell peppers, anything you want. Then, we add our sauces, and this is what elevates the sandwich and takes it into Subway category. If you don’t have honey mustard, you can literally make your own by combining mustard, mayo and honey till it tastes right. Be generous with your sauces and add whatever you like really. Think ranch, olive oil, peri peri, tomato ketchup. Whatever you want. Open up a bag of potato chips on the side, and there you have it. A wonderfully healthy meal.
