Bhook On A Budget: Fuss Free One Pan Chicken And Sweet Potato Dinner
As much as we love eating food, the clean up is the absolute worst. Who likes washing 20 different dishes and silverware? Not us. This is why we're big fans of the one pan, one pot, one bowl kind of meals. No fuss, no cleanup. As the weather gets chillier, this warm, hearty chicken and sweet potato dinner is not only delicious and comforting, but also so wonderfully easy —both to make and to clean up. Just a handful of ingredients, and one baking pan and you have yourself a healthy, hearty dinner!



Ingredients: 

  • 4 chicken thighs

  • 2 sweet potatoes

  • 2 medium onions

  • Paprika

  • Cajun seasoning

  • Garlic powder

  • Oregano

  • Salt

  • Butter or olive oil




Method:

Clean and pat dry your chicken using a paper towel. Using a knife, poke some slits onto the chicken on both sides. Sprinkle paprika, cajun seasoning, garlic powder, oregano and salt on one side of the thighs, and massage it into the chicken. Drizzle a few drops of oil if needed. Flip the thighs and repeat on the other side. Let the chicken marinate in your baking pan for a while.

In the meantime, wash your sweet potatoes, and then using a fork, carefully puncture holes all over the potato. This will ensure quicker cooking, as well as prevent the potato from exploding due to trapped steam. Next, dice up your onion into big cubes. On the baking tray where the chicken is resting, drizzle some more olive oil and throw in the onion cubes, tossing them around so that they get all mixed up in the oil as well as the chicken seasoning. Peel open the layers of the onion if needed. Place the chicken thighs on top of the onions and drizzle on some more olive oil. Next take your sweet potatoes and roll them around in the olive oil too.

Place the baking tray in the oven and bake for an hour. About 30 minutes in, take the sweet potatoes out and slice them in half so that they can cook faster. Keep checking on when the various components look to be ready and then serve and enjoy!
