Bhook On A Budget: Peanut Noodles For The Lazy
It's 3 AM and you're still awake for some reason. You're scrolling through your Instagram feed when all of a sudden one of the fifty thousand food photos on the app catches your eye. Pad Thai Noodles. Complete with crushed peanuts and a wedge of lemon on the side. Great, it's 3 AM and suddenly, you MUST HAVE pad thai. What not? Well, this is where our lazy peanut noodle recipe comes in handy. These peanut noodles take all of seven minutes to assemble, and require less than five ingredients, but pack a mean punch when it comes to flavor. Let's make them.



Ingredients: 

  • Spaghetti

  • Peanut butter

  • Lemon (or limes)

  • Sriracha

  • Sesame oil


 

Method: 

Boil your spaghetti in salted water. While that's happening, in a bowl mix 2-3 tablespoons of peanut butter, half a teaspoon of sesame oil and 1-2 tablespoons of sriracha sauce. If the mixture begins to seize and get really thick and stiff, either zap it in the microwave for a minute, or add a splash of pasta water. Once your noodles are done, lightly drain them and add straight to the sauce bowl. Mix mix mix and toss toss toss, and you're basically done. Squeeze a little bit of lemon on top, add some green onion or chopped peanuts on top if you want, but these noodles are great as it is.
